If you’ve been looking for a new North County dinner spot with some real heat, Verise Carlsbad inside the reimagined Hotel Solea is the move. Set along Cannon Rd with olive trees, pool views, and a fully dialed-in patio, it’s the kind of place that makes dinner feel like a night out.

Chef Riccardo Billotta brings serious experience from Michelin-starred kitchens, and Chef Jason Luke brings a more California feel. The menu is rooted in Italian tradition but keeps things approachable, with fresh pasta, wood-fired dishes, and seasonal ingredients. If you’ve seen the name FoodieLand popping up a lot lately, there’s a reason: it’s returning to the Del Mar Fairgrounds in May as one of the largest food‑festival weekends in the country.
